Spring is in the air, but if you are like me, you’re trying to stick your New Year’s Resolutions like trying to save money and eat healthier on busy nights. Oh and it is still freezing out in many places so you might be also trying to stay warm. Well this meal can help!

If you are looking for an inexpensive, healthy, low-carb, vegetarian supper that comes together in a the blink of an eye, look no further! Easy & Cheesy Italian Style Baked Spaghetti Squash is the meal for you!

It’s a super simple supper that’s big on flavor and quick to throw together.  I like to up use low-fat cheese and jarred organic sauce. Don’t tell Mr. Teacher! He has no idea! I do make Mr. Teacher some turkey Italian sausages on the side, but you do not need them to make this meal complete. Instead try a nice big salad.

Who is behind ‘The Teacher’s Table’?

Hello world! I am so excited to introduce you to myself and my kitchen skills. For years I have been asked for recipes and asked to teach cooking classes. I finally decided to do something about it and thus, The Teacher’s Table was born.

My name is Jessi.  I  live with the well fed Mr. Teacher and  my 4 cats in Southwest Florida. I am an elementary school teacher that loves to relax by spending time with food. I watch shows about it, read about it, dream about it, and love shopping for it. I am inspired by my family, friends, the world around me, the places I have been and the places I want to visit someday. Food tells a story. It takes you on a journey and brings back memories. Food  is amazing!
